With the rise in casual dining and the ascendency of chains such as Nando’s and Soho House’s Chicken Shop, it was little surprise that Richard Caring’s Caprice Holdings were also interested in exploring this space too. As owners of Bill’s Restaurants and The Ivy chain of restaurant, the organisation is no stranger to high street success.

From the outset, and with the input of Bill Collison himself, a top-to-bottom concept was created and implemented in London’s cosmopolitan district of Soho. Based on the idea of a diner with a twist, there was more than a healthy dash of Americana. We assisted in the development of the fledgling brand, creating an identity that reflected its vintage positioning and in-store signage.

The diner provided a test bed for the restaurant group to assess the viability of a potential nationwide roll-out and whilst this was ultimately curtailed, the learnings were fed into the sister brands.
